Baked Tacos

I have discovered a new favorite for dinner.  Of course, I found this on Pinterest.
I tried it out on my family and they LOVED it!  It is so easy and so good.
Try it out for your family and they will enjoy it too.

The original recipe is from One Good Thing By Jillee.  I love her website, she has lots of fun things.
You can make your own hard shell tacos.  Preheat your oven to 375 degrees.  Spray the corn tortillas with cooking oil spray on both sides and drape over two bars in your oven.  Bake for 5-7 minutes.
In a pan, brown the hamburger and add one can of refried beans, tomato sauce or taco sauce and taco seasoning.  Fill your taco shells with the meat mixture and top with lots of shredded cheese.
Bake at 400 degrees for 5-10  minutes.
Cover with additional toppings of choice and enjoy a marvelous meal. :)

Steak Fajitas

We have a freezer full of elk and deer meat!  And when I say a freezer full, I am not kidding.
We have so many steaks, roasts, ground meat, jerky, etc...that I have to get creative.
You can make the same things with elk and deer meat that you make with regular beef, but sometimes it is hard to think about what to do.

We had some steaks in the fridge waiting to be made for dinner.  I decided to make Fajitas, but I didn't have any fajita seasoning packets and I didn't want to have to pack up the kid and run to the store just for fajita seasoning.  So I decided to make my own.

Here are the players...
Garlic Powder
Onion Powder
Cayenne Pepper
Cumin
Paprika
Chili Powder
Sugar
Salt (optional)

It smells wonderful and makes about two seasoning packets full.

I cut up my steak into strips, cut up the onions and peppers.
Place some olive oil in the pan and start browning your steak, add your vegetables and the fajita seasoning, some water and mix in your pan.  Let it simmer.

Place the fajita mixture in a tortilla with cheese and any other toppings you prefer for your fajitas.
Yummy!!!

Fajita Seasoning
1/4 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Cayenne
1/4 tsp Cumin
1 tsp Paprika
2 tsp Chili Powder
1 tsp Sugar
1/4 tsp Salt (optional)

Steak Fajitas
Steaks, cut into strips
Green & Red Peppers, cut into strips
Onions, cut into strips
Fajita Seasoning
1 Tbsp Olive Oil
1/4 - 1/2 Cup Water
Flour Tortillas
Shredded Cheese
Shredded Lettuce

In a saucepan start heating your oil and place your steak strips in the pan and start browning.  Add your vegetables, water and the fajita seasoning; mix well.  Let is simmer until done.  Place your steak fajita mixture on a tortilla with cheese, lettuce and any other toppings you prefer.  Roll up and enjoy!

The Best Salsa Ever!

I have been on a quest to make the best salsa ever! My favorite salsa is the kind when you are eating in a restaurant and it is just the perfect blend of flavors. It has taken a while and I have tried many different recipes and most have been good. Not great, but edible. So while on my internet search I found this recipe from Pioneer Woman. And I have found it....the BEST salsa ever! It tastes as good or better than the stuff served in restaurants. :)

Restaurant Style Salsa
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
1/4 cup Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/2 cup Cilantro (more To Taste!)
1/2 whole Lime Juice

Note: this is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

So incredibly tasty...it will be gone very quickly!!!
